The Furtif Evercut® Santoku Knife performs the three essential cutting tasks a Santoku is named for: slicing, dicing, and mincing. Use it for fish and delicate vegetables, as well as any task for which you would use a chef's knife. This handsome, full tang blade features a sleek, all black non-stick finish along with Evercut® Technology from renowned French knife maker Tarrerias-Bonjean, providing a razor-sharp edge that never requires sharpening.

Each Evercut® blade is made in Thiers, France from tempered French stainless steel, which is then bonded to ultra-hard Titanium Carbide using a 7,000°F laser. This results in a virtually wearproof edge that remains sharp 300 times longer than steel alone and 5 times longer than ceramic blades according to British CATRA laboratory. That translates roughly to 25 years of use! Each knife is engraved with a unique serial number and inspected up to 20 times to ensure a sharp and perfectly balanced knife.

FAQ
Rockwell hardness scale is what on these blades?

The EVERCUT® technology (laser bonding of ultra-hard Titanium Carbide to stainless steel) brings the cutting edge's hardness so high that it is actually not rated on the Rockwell C hardness scale anymore but rather on the one of Vickers. The Vickers scale is used to measure even harder materials such as ceramic for instance, and EVERCUT® blades are rated at 1200 HV (approx. 12 GPa). In comparison, that's more than twice harder than steel (approx. 5-6 GPa) and as hard as fine ceramic (Zirconia Zr02 = 12.3 GPa), without being brittle or fragile.

Is this product magnetic?

Yes, the blade is indeed magnetic.

Do the blades come with sheaths to protect them when not in use? And if not, does the company offer any safe storage sheaths etc for the blades?

Evercut knives don't come with a sheath per se, however, they're sold with a box that was specifically designed for safe storage and edge protection.
